Day 9 - Still Austin- Cask Strength

The Still Austin Whiskey Company began distilling in 2017 And released their first straight bourbon in 2020. Some of my very favorite whiskies come from Texas. Hands down- always in my bar is a bottle of the Garrison brothers.
Still Austin we'll be a new addition to always have on hand.
Today we are tasting their cask strength bourbon whiskey. It has a mash bill of 70% white corn, 25% rye and 5% malted barley. This bottle comes in at 118 proof.
The nose is brown sugar, vanilla, caramel with some oak. The palette is more caramel, maple and Cinnamon. The finish is spicy, Oak and a bit herbaceous.
This one would make a fine everyday sip and with its high proof, benefits from a few rocks swirling in the glass.
I hope you enjoyed this one and maybe have this distillery in your sights should you ever visit Austin Texas.

Ohhh, this one is pretty interesting. Admittedly I've never heard of Still Austin before so I had to read up a bit. I probably would have passed this one over on the shelf, but I'm glad you didn't.
Great color to the pour and that first sip starts out hot, but quickly yields to flavors of caramel without much tannin feel. For me I was really impressed how the flavors opened up with the introduction of a cube - the heat dies down and that brown sugar comes out. I think this one would make a killer old fashioned.
This is a fantastic introduction to the brand - thank you for sharing!
My favorite so far!! Delicious!
Oh my. Yeah this is tremendous. Some people really interested in a digestif that compliments the dessert reach for Cognac, Armagnac, Brandy, Grappa, etc. There are a few Bourbons worthy of this spot in the lineup. Still Austin Cask Strength is surely one of them.
Like liquid pecan pie. Rich, creamy, carmely, with a touch of vanilla. Yummmm
I have a new favorite! This is delicious! Almost makes me want to go to Texas. Almost. But, wow, this is my jam. I love the carmel-y, brown sugary goodness with the bit of spice. So good!
