Let us introduce you to the Cathead Distillery of Jackson Mississippi. They are the first legal distillery in the state of Mississippi founded in 2010.

Today we are tasting the Old Soul Tintype Series #2 straight bourbon. Aged 8 years and 10 months, this bottle comes in at 113.7 proof. It is uncut and unfiltered and is in pure cask strength with only 29 barrels produced.

The Mashbill is 75% corn, 21% rye and 4% malted barley. The nose is sweet with corn and spicy from the rye, with vanilla and butterscotch. The palette is fruit, spicy, with a hint of anise. The finish is pepper and cinnamon.

This is truly a special whiskey. We hope you enjoy this one as much as we have. Please let us know in your comments.

It may be obvious that we have an affinity for high-proof whiskies. We heard the expression “proof whore”.

We argue that there is something to be said for the fullness of flavor found that is subdued in lower proofed whiskey. That said, I find higher proof whiskeys have more depth and add to the overall experience. I would love to hear your thoughts on that.

We hope you are enjoying this year's selections. Only two more days to go. I hope you're enjoying Discovering new tastes. We are excited to share the best of what we have found in the past year.

The image of Daffy Duck dressed as a cowboy drinking a glass that the bartender slid his direction, and in short order he breathes out flames like a dragon. Yeah, that aptly summarizes this first sip. Not saying that is a bad thing, but YOWZA this one's got some heat behind it. It's like the older gentleman on the bottle is trying to tell you something along the lines of "don't go rushing into this one, take it slow and allow the music to come from within".

The initial aroma I was picking up hints of spice and after the fire in my belly died down my mouth area noticed a balanced, spice-forward taste was lingering. Normally I give it…

Hot as fuck for sure. But I really like how the flavors are in the lead and heat gradually feathers in as the flavors fade. I'd definitely enjoy this with a rock.

Woo! This is hot! It has a sweetness at the start, but tobacco on the end. But I wouldn't turn it away if it was in my glass.
