2025 Day 8 - Hirsch Single Barrel Kentucky Double Oaked Bourbon

Today's tasting comes from Bardstown, Kentucky. This is a single barrel bourbon that has been double oaked in its maturation. This bottle has been aged 7 years and 5 months.
The mashbill is 72% corn, 13% rye, and 15% malted barley.
The nose begins with Vanilla and Maple, also soft notes of oak and fig. The palette is caramel, vanilla and cinnamon. The finish is more vanilla, light caramel, tannin and raw sugar.
This is quite a delightful bottle, and given its high proof, a Very approachable to drink.
This would be good one for mixed drinks. However, I'll leave it to you.

You can tell instantly this one is a double oak by the coloring - that deep caramel brown is so inviting. The first sniff gave me notes of sweetness and brown sugar, which was a similar theme as that first slip went down leaving a very holiday spice aftertaste. At the half-way point I introduce the rock and everything settled into a cool/smooooooooth sip. Both Rachel and I agree this one is fantastic!
Admittedly I've been looking forward to this one since I caught a glimpse ahead (cheating, I know). I took a look at my tasting notes amassed over the last 15yrs (it's not excessive drinking if you take notes, it's research) and found that time and time again…
A lovely bourbon. Alexis thought it hot but I think it just needs a little tempering with a big rock. I don’t agree with it being a mixer I think it is too good on its own. I drink cinnamon in my tea every day (which I reco btw) so that is pronounced for me and love the baking spice element. Great finish!
Lord have mercy...beautiful nose and integrated flavors. Big fan of the Hirsch lineup and this one must be the flagship.
The color is gorgeous! I love Bourbon. This is sweet, and layered, and it packs a punch! It gets better with every sip. I can see it in a mixed drink, but it would be a shame to hide any of it's flavors with other ingredients.
Really enjoyed this. Rich mouth feel. Lots of caramel and sweetness. I could sip a lot of this.
